From the combination of passion, science, and expertise, an effective approach to baking has been born, with dedicated paths for amateurs and professionals.

Fudemy was born from the decades-long experience of Giovanni Tesauro in training and scientific dissemination. By introducing a scientific approach and multi-sectoral skills built up over the years into the baking industry, Fudemy quickly became the most valuable and diverse consulting company in Italy and beyond.

Its team includes true experts in the field of baking, whether it be Neapolitan Pizza, classic Italian pizza, Roman-style pizza in teglia, focaccia, sourdough, bread or panettone, that take care of customer support and training, for every need. Resultantly, thousands of customers, both enthusiasts and professionals, have taken advantage of courses and consultations, online and on-site.

Additionally, Fudemy’s strategic partnership with Gruppotre and Whitestudio allowed its new product offering to expand into marketing strategy & communication, web development and interior design.

Firstly he graduated in Aerospace Engineering, then he became one of the first certified meteorologists in Italy with experience as a science consultant for institutions, municipalities, and schools. Though, cooking and pizza have always played an important role in his passions and, as a result, since the late 2000s he has started attending professional and non-professional baking courses, as well as working in various local restaurants.

Consequently, after assessing the training offer in the field as not up to the standards he experienced in different sectors, he created a one- to-one consultancy company based on the transmission of concepts in a different, scientific, and popularizing way. The demand was enormous right from the start, allowing “Giovapizza” to become a renowned baking educator and consultant in Italy and Europe. Through the years, thousands of amateurs and professionals have positively benefited from this new offer, and dozens of restaurants have opened to the public with his support.

In 2021, he founded Fudemy S.r.l., which now provides not only one- to-one training and consultations, but also services like product creation, marketing strategy & communication, web development and interior design. He is the company’s CEO and a baker consultant.

After finishing high school, he moved to London for his university studies, which led him to become a Doctor in Marketing and Communication. It was precisely here that he started working in hospitality; what was a necessity soon became a great passion.

His continuous desire to learn and improve led him to work in England, Australia and the United States, in cities such as London, Brisbane, Melbourne and San Diego, gaining experience in numerous pizzerias and venues with different concepts.

This work and training path, through the study of marketing and communication and in a multicultural context, has ensured that he has assimilated cross-cutting skills, both on the specific product and on the all-round management of the venue, from the work chain to the communication on social media.

Being a perfectionist by nature, he has cultivated his many passions over the years, always seeking to deepen their technical aspects.

After graduating from a scientific high school, he worked in various management roles until 2012. During these years, he attended numerous cooking, pizza, and bread-making courses, both amateur and professional, coming into contact with sourdough, which he deeply fell in love with.

He then decided to change his life and embarked on opening “Lievitamente” in 2015, an innovative bakery that offered not only sourdough bread, but also panettone, Genoese focaccia and Roman-style pizza al taglio. The success was remarkable both in terms of public and critical acclaim: in 2019, Lievitamente received the “three breads” and “two wheels” award on the Gamberorosso guides.

Afterwards, Gabriele dedicated himself to consultancy, communication, and training, collaborating among others with Moretti Forni for internal training and R&D.

Since 2021, he has been a Master Tutor at Fudemy, specializing in sourdough, different styles of bread, and panettone.
